BANG BANG NOODLES
Ingredients:

Pre cooked noodles – as per instruction on pack

Stir fry vegetables of your choice

Finely sliced pork, beef or chicken
Cooking Instructions
-
In a pan or wok stir fry your sliced pork, beef or chicken until thoroughly cooked
-
Stir-fry the vegetables, we like root vegetables and red peppers.
-
Pop back in the meat and cooked noodles add 4 tablespoons of bang bang sauce and toss together.
-
Can be served hot or cold.

Signature FRITTATA
Ingredients:

Ballymakenny Potatoes – Why not use a purple Violetta?

Local Free-Range Eggs
-
Wild Oregano
-
Semi Sundried Tomato’s
-
Choose any cheese from Corleggy Farm or Mossfield
Cooking Instructions:
-
Peel & dice your potatoes approx. 1 large potato per person.

Par boil them until just soft.
-
Grease a oven proof dish, toss in the drained potatoes, add finely chopped garlic and sun dried tomato . (If using Drummond House Scape whisk a tablespoon into the eggs)

Whisk the free range eggs, season well and add a pinch of Oregano, pour over the potatoes and pop into the oven on a medium heat. Gas Mark 5 fan 150C degrees. Cook for approx. 30-40 mins, when the frittata is cooked through, top with cheese and return back to oven until melted.

Can be served hot or cold.
